Crêpes sucrées • Classic French crêpes

During these social-distancing times where we can’t travel back home, comfort food from our native countries is even more important to our well-being. For Maxime, crêpes are one of those quintessential French staples that he makes regularly on weekends to feel at home.

Crêpes are strongly tied to the French region of Bretagne from the northwest part of the country, along the Atlantic ocean, where his paternal grandma still lives and where he spent most of his summer vacations during his childhood. Before leaving, they would always grab three dozens crêpes at the local bakery to bring home and keep the vacation spirit going. Of course, Maxime’s family would regularly enjoy homemade crêpes at home throughout the year until the next summer.

Made from only four ingredients (flour, milk, egg, butter), crêpes are very easy to cook with a bit of practice and can be second nature for any Sunday cook!

Ingredients

  • 120 g 120 all-purpose flour

  • 1 1 egg

  • 240 g 240 whole milk

  • 1 tbsp 1 butter

  • 1 tbsp 1 sugar (optional)

Directions

  • In a large mixing bowl, whisk together the flour and the egg. Gradually add the milk and the melted butter, stirring to combine until smooth.
Optional: let the batter rest for at least 30 minutes
  • Heat a lightly buttered frying pan over medium high.
  • Pour 1/3 cup of batter in the center of the pan and tilt it with a circular motion for the batter to cover the surface evenly.
TIP: it can be worth investing in a crêpe spreader and spatula kit for better results!
  • Once the edges become slightly golden (about 2-3 minutes), flip the crêpe and cook another minute.
  • Fold the crêpe in four, serve, and add your favorite topping!
