We are excited to publish our croquettes recipe- a beloved shareable that you will love to make for your next get-together! Maxime remembers feeling excited growing up whenever he knew that croquettes were on the menu.

Those little mashed potato bombs are very versatile. You can fill them with ground meat, fish, veggies, or really anything your heart desires! In this recipe, we decided to go with cod that is first poached with garlic, onion, and carrot.

Once the mashed potatoes and the filling are ready and mixed, the croquette-making part can begin, coating in breadcrumbs and frying until goldened.

We served these croquettes with some of our homemade tomato sauce that we canned last fall. This is optional and they can be served with your favorite sauce, or even without any at all, this is really up to you!

Ingredients

  • 1/2 kg 1/2 potatoes

  • 200 g 200 cod (or other white fish)

  • 1/4 1/4 onion

  • 3 3 garlic cloves

  • 1 1 carrot

  • 2 2 eggs

  • Flour (for breading)

  • Breadcrumbs

  • 1 cup 1 parsley

Directions

  • To poach the cod
  • Slice onion, garlic, and carrot. Combine with 4 cups of water and bring to a boil over high heat. Reduce heat to low until liquid is at a simmer.
  • Cover and simmer for 20 minutes.
  • Add cod in and remove pot from heat. Poach cod for 10 minutes. Remove, crumble cod, and set aside.
  • To make the croquettes
  • Cut the potatoes into quarters. Bring a pot of water to a boil and cook the potatoes until softened.
  • Allow potatoes to cool down a few minutes, then peel them.
  • Mash the potatoes.
  • In a large bowl, mix potatoes, crumbled cod, and minced parsley.
  • Shape croquettes using a one-tbsp measuring spoon. Roll on a plate covered of flour, then roll in egg wash, then roll in breadcrumbs.
  • Heat up vegetable oil in a large saucepan and fry the croquettes until goldened.
