Beignets aux pommes • Apple beignets

They say “an apple a day keeps the doctor away”. This might not be a doctor’s recommended way of eating apples, but it sure is delicious.

Just as donuts and fried Oreos are popular at state fairs in the U.S., beignets are a must-haves for the Carnaval festival in France.

Ingredients

  • 2 2 apples

  • 200 g 200 flour

  • 25 g 25 sugar

  • 2 tbsp 2 vegetable oil

  • Pinch of salt

  • 1 1 whole egg

  • 1 1 egg white

  • 300 ml 300 milk

  • 1 tsp 1 cinnamon

  • Vegetable oil (for frying)

  • Powdered sugar

Directions

  • In a large bowl, whisk together flour, sugar, the tablespoons of vegetable oil, salt, egg, and egg white. Add cinnamon and whisk until well combined.
  • Slice the apples and remove the core: either with a cookie cutter or with a knife.
  • Prepare a large saucepan with vegetable oil. Heat up until the oil reaches a temperature of 175°C/350°F.
  • Dip a slice of apple in the batter, then gently dip in the oil. Flip every 15 seconds until the beignet is golden – it should take about 1 minute total per beignet.
  • Sprinkle powdered sugar on the beignets just before serving.
