Ingredients

  • 2 2 fresh bagels

  • 1/3 cup 1/3 grated emmental cheese (25 g)

  • 1 1 egg

  • 1/3 cup 1/3 heavy cream (8 cl)

  • 4 slices 4 ham

  • Butter

  • Chives

  • Cumin (optional)

  • Nutmeg (optional)

Directions

  • Whisk together the grated emmental, the egg, and the heavy cream, until combined. Season to taste with salt, pepper, cumin, and nutmeg.
  • Cut the bagels in half and score their outer sides (so they will better absorb the butter and get crispy).
  • In a hot pan, melt 2 tbsp of butter, place the bagels scored side down, spread the cheese mixture, and a slice of ham on each.
  • Once the bagels look crispy and the cheese has melted, remove from pan, cut in halves and fold (see picture), and sprinkle some chives.
