Mousse au café • Coffee mousse

This coffee mousse is a delicious variant to the more traditional chocolate mousse and will be the perfect dessert for that next dinner with your friends. It is truly a recipe that doesn’t require anyone to be an experienced cook – and it is fun to make!

This mousse can be served in different ways: with some grated chocolate, with some chocolate sauce, with a few raspberries, or any other fresh fruit of your choice.

Our iced coffee was provided by Emshika’s, but you can also make your own coffee with your favorite blend.

Ingredients

  • 1 can 1 iced coffee (or 1/3 cup strong hot coffee)

  • 1 can 1 evaporated milk

  • 1/3 cup 1/3 brown sugar

  • 1 1 large egg yolk

  • 1 envelope 1 unflavored gelatin

  • 1 cup 1 heavy cream

Directions

  • Add the can of coffee to a pot and heat to medium. Let the coffee reduce for 20 minutes.
  • In a saucepan, combine the evaporated milk and the reduced coffee. Cook on low until it lightly starts steaming.
  • In a bowl, whisk together the egg yolk and the brown sugar.
  • Add 1/2 of the milk mixture into the bowl and combine well. Then, add this egg-milk blend back to the saucepan and cook over low heat until it reaches 75°C/165°F.
  • Remove from heat, stir in the gelatin, and set aside in fridge for an hour.
  • A few minutes before the time is up, beat the heavy cream until stiff peaks form.
  • In a bowl, gently mix half of the whipped cream with the egg-milk mixture. Add the remaining whipped cream.
  • Transfer the mousse to the containers of your choice and serve it chilled.
