Tourin • French garlic soup

Calling all garlic and onion lovers!

Tourin is a French garlic and onion soup that originated in the southwest regions of Bordeaux and Périguord. While some other regions have their own version, and while the classic French onion soup is well-known, this recipe delivers such a unique and powerful garlicky taste that you must give it a try for the experience. If you enjoy it and want to go even further, you may want to increase the garlic-to-onion ratio!

FYI, this soup was traditionally used as a cure for hangovers, as the garlic supposedly helps with digestion! 😅

Ingredients

  • 300 g 300 onions

  • 10 10 garlic cloves

  • 2 2 eggs

  • 4 tbsp 4 red wine vinegar

  • 2 tbsp 2 olive oil

  • 1 tbsp 1 flour

  • 1.25 l 1.25 boiling water

  • Salt to taste

  • Pepper to taste

Directions

  • Mince onions and garlic.
  • Heat up the olive oil in a saucepan and sautée the onions until golden (about 5 minutes).
  • Turn heat to low and add the garlic. Cook for 3 additional minutes.
  • Sprinkle the flour and stir until combined.
  • Add the boiling water, salt, and pepper. Cover and simmer for 20 minutes.
  • Drain the soup, then return to low heat.
  • Separate the eggs. Combine the red wine vinegar with the yolks, and whisk in the soup. Then whisk the whites in as well. Cook on low for another minute.
  • Serve warm.
