Omelette baveuse • Runny omelette

We are back with a French classic that most of you already know and may guessed by the picture: the French ‘omelette’.

This runny version is one of Maxime’s favorite quick dishes that remind him of his childhood. As you will see in our recipe card, omelette is a really easy recipe that you will master very quickly.

Seasoning is up to your taste and that’s the fun part – herbs and spices are tools and the pan is your playground. Cheese and vegetables (such as diced tomatoes) are not off limits and offer even more options. A multitude of savory combinations is at your fingertips!

Ingredients

  • 4 4 eggs

  • 1 tbsp 1 chives

  • 1 tbsp 1 crème fraîche

  • 1/4 tsp 1/4 salt

  • Pepper

  • 1 tbsp 1 butter

Directions

  • Beat the eggs in the bowl.
  • Mix in chives, crème fraîche, salt, and pepper.
  • In a medium pan, heat butter on medium-high.
  • Once the butter has melted and the pan is hot, pour in the egg mixture.
  • With a fork, gently stir and continuously bring the edges toward the center of the pan. The omelette should start solidifying shortly, after a minute or so. At that moment, flip one side onto the other (not entirely though, but as per our picture above).
  • Serve immediately while warm!
